WHere is an easy version of a beverage found on a new menu. It's a large-volume pre-mixed which is loaded full of essence of a Christmas time, making it excellent for your holiday party. Reserve the remaining cordial you can use for morning drinks, sweets, or for another batch of bikinis.
Bikini
Serves 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
Making the Syrup: Combine all the ingredients inside a saucepan, bring to a light boil, stirring so the sugar melts. Then, remove from the heat allowing it to cool fully. Decant into an clean bottle, seal and store in the fridge, it will last for around a month.
For the Batch Mix: Combine the specified liquids in a big jug, leave to sit for one hour, then pass it through , ideally through a fine cloth, to ensure it's completely strained.
To serve: Measure 85ml of your batch mix into a cocktail shaker packed with ice, and agitate gently for one minute to chill. Pour into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch with a light spray with the mandarin essence over the drink.
